Friday Night Fun Night – Beer and Nibbles

Cob Loaf & Pure Blonde

Over the last couple of week it has taken a little turn for the cold here in Brissy. So my Friday nights have started to involve some warmer foods!  A couple of weekends ago, my brother put me onto Cob Loaf! A great one for kids too, if they are hanging around!

I have paired the meal with a Pure Blonde – basically because it is my beer of choice at the moment and it’s what I had in the fridge. But over the next few weeks, I will be getting a bit more adventurous.

1 Cob Loaf or really any loaf that hasn’t been sliced (no judgement here)

Olive Oil for cooking

1 small onion, finely chopped

200g of bacon, roughly diced

2 tablespoons of chives

250g block of cream cheese

2/3 cup of cream (haha I didn’t put that in mine – it worked out)

2/3 cup of sour cream

1.5 cups of grated cheese – tasty/cheddar

  • extra bread maybe required

STEP 1: Preheat the oven 180C or 160C if fan forced. Line a large baking tray with baking paper.

STEP 2: Cut 4cm off top of cob loaf to form lid. Scoop bread from the centre of the loaf leaving a 1.5cm edge. tear or roughly chop bread pieces (I reckon you don’t want them too small about 50c)

STEP 3: Heat oil in frying pan and cook bacon and onion. For about 5 minutes or until the bacon has gone brown and the onion has softened. Remove from heat

STEP 4: Add chives into the bacon mix. Stir in creamed cheese, cream, sour cream and grated cheese until it’s all combined and there is no cream cheese lumps. Season with salt and pepper.

STEP 5: Spoon the mixture into the bread. Arrange the bread around the tray. Bake for 20 minutes or until lightly toasted.

STEP 6: Sprinkle top of the dip with extra chives (so happy I went back and cut more – its a game changer) and serve it while its still warm!

Hope you enjoy – let me know in the comments below if you have a recommended Cob Loaf flavour. Because I think you can do mushroom in it?
